Wednesday,  October 26

7:00pm -  Champagne Welcome Reception 

Join us for a special evening of delectable hors d’oeuvres and seaside cocktails featuring select vintners sharing their exquisite wines and spirits. The Champagne house Ruinart, LVMH will be showcasing various of their Champagne houses including Krug, Veuve Clicquot, and Ruinart. Skipstone Ranch wines produced from their Alexander Valley estate, made by renowned winemaker Philippe Melka. Littorai which focuses on elegant chardonnays and pinot noirs sourced from iconic vineyards throughout the North Coast of California. Up and coming Bodegas Encinillas producing wines from Chihuahua and Clase Azul Tequila. Chefs will also be showcasing their unique offerings paired with canapés and homemade Charcuterie prepared by renowned guest chefs and Jasper Hill Farms showing the extraordinary World Wide Awarded variety of cheeses.

Thursday, October 27

10:00am – 11:00am - Mexican Salsa Cooking Class

Make your Own Salsa Cooking Class, Join the Chefs in the search of creating your perfect Mexican salsa, using different Mexican Chiles from the Traditional Jalapeño to the most unknown, like Chilhuacle or Chiltepin. 

11:30am – 12:30pm - Cheese and Wine Class

Jasper Hill Farm and LVMH, Skipstone, Littorai and Bodegas Encinillas create Wine and Cheese Cellar Tasting “Stations” with Mexican Crackers and Snacks, Homemade Organic Jams and Compotes.

7:00pm - Mexican “Dia de Muertos” Dinner Celebration

Delight in the creation of a Mexican “Dia de Muertos”- a tradition reflecting Mexican culture and style, complete with musicians, food booths, and artisans.                                              

Skillful Chefs will create unique dishes in stall-like settings inspired on Mexican Dia de Muertos Traditions, joined by mixologist Ulysses Vidal from Employees Only in New York City and Daniele Dalla Pola from Nu Lounge in Bologna, Italy. Refresh with craft beers of Baja Brewing and relish in the amazing food prepared by our celebrated guest chefs. 

Friday, October 28

11:00am – 12:00pm - Ocean to the Table Cooking Class

Join the chefs preparing Mexican Ceviches, Aguachiles, tiraditos and more with local fresh fish caught early in the morning

1:00pm – 2:00pm - Clase Azul, México a Través del Tiempo

The essence of Clase Azul Spirits is inspired by a mission to reveal and rediscover a deeper appreciation for the beauty of Mexico's traditions. In order to comprehend the importance of these traditions, you must first understand the culture and history of México by learning the stories, legends, and tales that remain relevant in Mexico while sipping one of the Greatest Tequilas in Mexico

Saturday, October 29

11:00am – 12:30pm     Mixologist Class

Ulysses Vidal, David Hernandez, Daniele Dalla Pola and Sahara Ruiz teaching how to prepare inspired original Mexican Cocktails

7:00pm - Art of Taste Dinner

Begin the evening with an intimate cocktail reception.

A five-course dinner with each course expertly prepared by our master chefs will be served in Don Manuel’s Restaurant. Our Celebrity chef’s dishes will be paired with wines from our partners that include Dom Perignon, Littorai, Skipstone Ranch and Bodegas Encinillas. We will also have a cheese course that will be complemented by a variety of VORS Sherries provided by our friends at Gonzalez-Byass. Culminating in a celebratory closing toast with Tequila Clase Azul. Will accompany each course culminating in a celebratory closing toast with Clase Azul.

Enjoy music and dancing under the stars to the melodies of a live band during the dinner.
